CHICKEN WINGS WITH CHIMICHURRI HOT & Green Jalapeno Mango Chutney
A delicious simple dish with a twist.
SERVES 6 | PREP TIME: 10 MINUTES COOK TIME: 30 MINUTES
- 1.5kg free-range chicken wings
- 2 teaspoons fine sea salt
- 3 tbsp chimichurri hot
- 3 tbsp olive oil (I used extra virgin olive oil)
- Vegetable oil, for deep -frying
TO SERVE
- 3 tablespoons of Green Jalapenoi Mango Chutney
Heat enough vegetable oil in pot to cover about 4 chicken wings at a time. When the oil is quite hot (don't let it start smoking), use a large metal slotted spoon and place 4 wings in the oil. Cook for around 3 min and then remove and place on a plate lined with paper towel. Repeat until all thew wings have been fried.
Pre-heat the oven to 180 'C.
In a separate bowl mixed together the Chimichurri Hot and olive oil and then addd the chicken wings and ensire they are well coated. Please them on a oven proof tray lined with baking paper and cook for 8 min and then turn them over and cook for another 8 min until nice and crispy on the outside.
Serve with a nice serving of Green Jalapeno Mango Chutney on the side. The sweetness from the mango pairs incredibly well with the spiciness of the from the Chiumichurri Hot.
